Louisiana Gumbo: Ponchatoulas

Ponchatoulas is located in downtown Ruston in a former fire station. It then became the homePonchatoulas Front of KRUS radio station and it’s there, in an upstairs studio, Elvis recorded.
 
This is a true local’s hangout that serves a gumbo the Cajuns would be proud of. Ruston has the best peaches in the country, sorry Georgia, and I was wondering if they made a peach gumbo. They didn’t. They only serve File’ Gumbo with chicken and andouille sausage. 
You get a large bowl of gumbo for $6.50 or a cup for $4.99.

It’s a dark roux gumbo that’s not too thick but plenty flavorful. There were plenty of smallpieces of chicken and andouille. It was a little on the salty side, but not to the point where it took away from the flavor. The rice was good, but didn’t add anything to the flavor. It did have a very good afterburn. It was served hot, and as you can see they include a piece of french bread that you can use as a crouton.
If you’re in Ruston on the weekend, Ponchatoulas has live entertainment.
