Abita Springs is a lovely bedroom community of Mandeville which is located in St. Tammany Parish. Abita Springs has a population of approximately 2,500 residents and is the home to one of the most popular breweries in Louisiana, The Abita Brewing Company.
On a recent visit to Abita Springs, I stopped in at the Camellia Café which is located on Highway 59, approximately two miles north of I-12 and the St. Tammany Parish Tourist Commission. The Camellia Café has an older sister which is located in Slidell, also in St. Tammany Parish. The Camellia Café has two gumbos on their menu. A Chicken and Sausage Gumbo and a Seafood Gumbo. Both are priced the same at $4.95 for a cup and $7.95 for a bowl.
I had the pleasure of tasting their Chicken and Sausage Gumbo. As you can see by the photo, it’s a very dark gumbo which, if done right, is my favorite. They did it right. There was a fair amount of sausage and small bits of chicken. There was okra in the gumbo which kind of surprised me, but it wasn’t slimy. Another couple of things that surprised me were the lack of a Gumboroma, but it had a wonderful after burn. The rice was cooked perfectly and served warm. All things considered, this is a gumbo to put on your list.
