If you Desire a very good Creole Gumbo and are in the French Quarter, you have to go to the Desire Oyster Bar. The Desire Oyster Bar has just been renovated and is one of the dining fixtures of one of the great French Quarter hotels, the Royal Sonesta New Orleans.
The Desire Oyster Bar has only one gumbo. It’s their Creole Gumbo which has good size shrimp (not the bay shrimp that some restaurants use) and a very good smoked sausage. The cost is a little higher than others but they only use quality ingredients. A cup is $9 and a bowl is $12. Here is the rest of the story. This is a medium colored roux, which gave off a great Gumboroma. It had plenty of stuff as listed above, but it did have okra which is a traditional ingredient of a Creole Gumbo. The good news is the okra did not give off a slimy consistency. It was perfectly seasoned which left me with a great after burn. The rice was good but, as usual, didn’t add anything to the gumbo.
